Easy Vegetable Fried Rice

Thinking about ordering Chinese Take-out for dinner?  Why not try making this healthier version instead?  It's quick and easy, and only has 5 core ingredients.  Our Healthy Vegetable Fried Quinoa is another delicious alternative! 

Makes: 4 servings

Ingredients
1 cup uncooked brown rice (or 4 cups of left over cooked brown rice) 
1 Tbs oil (vegetable, olive, or canola oil work well)
1 cup frozen shelled edamame (½ of 12 oz bag), thawed
12 oz bag frozen stir fry mix vegetables, thawed
2 large eggs 
3 Tbs reduced-sodium soy sauce
½ tsp garlic powder (optional)

Instructions
  1. In a medium saucepan, cook the brown rice according to package directions. Set aside.
  2. In a large skillet or wok over medium heat, warm the oil. Add the edamame and mixed vegetables. Cook, stirring often, until warm.
  3. Whisk eggs in a small bowl. Clear a spot in the skillet, and add in eggs. Cook, stirring eggs often, until scrambled.
  4. Add rice, garlic powder (if using), and soy sauce to the skillet, and stir everything together until combined and warm.​
