Dark Chocolate Black Bean Brownies

These brownies are a source of filling fiber and protein with less added sugar than the average treat!  So rich and delicious, no one will ever guess the surprise ingredient. ​

Makes: 12 servings

Ingredients
1 can (15 oz) black beans, drained and rinsed

½ cup sugar
½ tsp baking powder

¼ cup dark cocoa powder
3 eggs
3 Tbs canola oil
1 tsp vanilla
1 tsp instant coffee granules

⅓ cup dark chocolate chips

Optional: 1/4 cup chopped walnuts

Instructions
  1. Preheat oven to 350°F. Place parchment paper in the bottom of an 8x8 inch baking pan.  Lightly spray the parchment with cooking spray.  If you do not have parchment paper, spraying the bottom of the pan is just fine.
  2. In a food processor or blender, blend all the ingredients except walnuts and chocolate chips until smooth.
  3. Pour batter into baking pan. Top with nuts and chocolate chips.
  4. Bake 30-35 minutes. Cool and cut into squares.
