Makes: 6 Servings Ingredients 2 tsp canola oil ½ of a medium onion, diced 3 large celery stalks, diced 3 large carrots, peeled and diced ½ tsp salt (optional) ½ tsp black pepper (optional) ¼ tsp whole fennel seed ⅛ tsp crushed red pepper 1 can (15oz) black-eyed peas, low sodium, drained and rinsed 3 ½ cups water 6 oz extra-lean turkey ham, diced into ¼ inch chunks (about 1 cup) ⅓ cup fresh kale, coarsely chopped 1½ Tbs fresh parsley, chopped Instructions
