Crock Pot Vegetable Brown Rice
Serve this delicious brown rice with grilled chicken or add some beans for protein!
Yield: 4 Servings
1½ cups uncooked brown rice
3 cups vegetable broth (or chicken broth)*
2 cloves garlic, finely chopped (or 2 tsp garlic powder)
8 oz frozen bell peppers and onions
10 oz frozen vegetables (green beans, carrots, peas, or whatever you like!)
1 Tbs olive oil or other vegetable of choice
1 tsp pepper
toppings (avocado, cilantro, parsley, or anything else you enjoy!)
Note: Use low sodium broth or 1½ cups water and 1½ cups broth to cut back on the sodium in this recipe.
